The Wine
A pale, classic Provençal rosé with strawberry, white peach, citrus peel, and a whisper of garrigue. Crisp, dry, and quietly mineral.
La Croix is sourced from estate vineyards at 300 meters of elevation, planted on limestone and clay that retain freshness even in warm years. The 2025 vintage was marked by cool nights and steady ripening, conditions that are ideal for rosé. Grapes are harvested at night to retain acidic freshness, pressed gently, and fermented at low temperatures in stainless steel to preserve aromatics and the estate’s signature saline edge.
Pairings: Niçoise salad, grilled shrimp, herbed chicken; cheeses like fresh chèvre, feta, or young Manchego.
The Winery
Founded by the Knights Templar in the 13th century, Château Peyrassol is one of Provence’s oldest estates. Today it is organically farmed and guided by winemaker Pierre Guérin, who emphasizes finesse, salinity, and limestone‑driven freshness across the range.
