The Wine

A crisp and refreshing white wine from this ancient Friulian grape! Ribolla Gialla is one of the region's most distinctive white grapes. It is enjoying increasing amounts of well-deserved limelight as a darling of the Sommelier set. The grape has deep roots in the hills around Oslavia and the broader Collio, where its naturally high acidity and understated aromatics have made it a staple of local white wine culture. 

The fruit comes from hillside (Collio, in Italian) vineyards rooted in ponca, the region’s layered marl and sandstone soil that naturally restricts vigor and lends a distinct mineral character to these complex white wines. Fermentation takes place in stainless steel at cool temperatures to preserve the grape’s delicate aromatics and its hallmark acidity.

The wine shows a pale straw color with green highlights, opening with scents of lemon peel, white blossoms, fresh herbs, and the faint almond note that Ribolla Gialla often carries. The palate is taut and refreshing, offering citrus, pear skin, and a saline edge that keeps the wine lively from start to finish. It is a clean, linear style meant for the table, where its subtlety and structure shine.

Pairings: Excellent with prosciutto, simple seafood dishes, grilled vegetables, herb‑driven pastas, and fresh cheeses that complement its bright, savory profile.
